Method
Make batter by mixing flour, eggs, salt and pepper and enough milk to make a thick batter.
Add veg and curry powder and mix through.
Heat a lightly greased frying pan and spoon small spoonfuls of veg and batter mix.
Heat for 2-3 minutes each side.
Serve with dipping sauce of your choice...for example mango
chutney, mayo or my son likes it with salsa!

- 100g Self-raising flour
- 2 Eggs
- approx 3-4 tbls milk
- ¼ red pepper very finely diced
- ½ carrot. grated
- 3-4 tbls frozen petit pois
- small tin sweetcorn
- 3 spring onions. finely chopped
- heaped teaspoon curry powder
- salt and pepper
