Method

  • Saute onions in butter until soft.
  • Add all other prepared veg and a small ammount of stock.
  • Continuously stir over a gentle heat until veg start to soften.
  • Add the remaining stock and gently simmer for another 40 -45 mins.
  • Season to taste and serve with fresh crusty bread.
  • Tips

    • You can add whatever you fancy to this basic soup. Baked beans, left over meats etc etc.
      Also if you prefer a smoother soup blend either all or half or it before serving.
      My mum used to put chunks of really strong cheese in the middle of it for us as a treat and it was scrumptious!

    Ingredients

    • 4 large potatoes. peeled and chopped into chunks
    • 4 large carrots. peeled and diced
    • 1 medium swede. peeled and chopped in to chunks
    • 2 leeks chopped
    • 1 tin butter beans (optional)
    • 1 large onion. chopped
    • pinch herbs of your choice
    • 2 pints veg stock (doesn't matter if you use cubes)
    •  butter to saute in
    •  salt & pepper to season

    My mum used to make this soup from left overs. She'd throw anything in to it & have it on the stove so when my brothers and I can in 'starving' from playing it was always ready.
