Ingredients

  • 1lb blackberries
  • 1lb sugar
  • 1½ pt best cyder vinager

Method

If picking the blackberries choose only the ones at arms reach (remember the ones above are for the birds and the ones below for the badgers and foxes)
Wash blackberries and add to the vinager and sugar in a heavey bottomed saucpan, stir untill the sugar is disolved. simmer for 1 -1 1/2 hrs untill a syrup is achieved, strain through muslin and bottle.
Keep refrigerated. When using ,mix with hot water and let the vapours clear your nose and syrup sooth your throat.

I love these vinegars and not only are they beautiful to drink, but they make wonderful additions to dressings over salads.
