Fill a saucepan with water and bring it to the boil.
Heat the oil in a frying pan, add the onion and garlic and cook slowly for 5 minutes until soft. Add the pepper, tomatoes, oregano, salt and pepper and bring to a gentle simmer.
When you've done this, add the spaghetti to the boiling water. The 10-12 minutes it takes to cook should be enough time to reduce and thicken the sauce.
With 5 minutes remaining, add the cherry tomatoes to the sauce.
Just before you drain the spaghetti, add the basil leaves to the sauce. Either put the spaghetti on plates and spoon over the sauce, or mix them all together in a pan before serving, according to preference.
This is a pasta dish which my dad calls "my thing", and demands on a regular basis. We often make a half portion and serve it with bean burgers and/or spinach and ricotta slices.
