Spaghetti with A Quick Tomato Sauce

Method

  • Fill a saucepan with water and bring it to the boil.

  • Heat the oil in a frying pan, add the onion and garlic and cook slowly for 5 minutes until soft. Add the pepper, tomatoes, oregano, salt and pepper and bring to a gentle simmer.

  • When you've done this, add the spaghetti to the boiling water. The 10-12 minutes it takes to cook should be enough time to reduce and thicken the sauce.

  • With 5 minutes remaining, add the cherry tomatoes to the sauce.

  • Just before you drain the spaghetti, add the basil leaves to the sauce. Either put the spaghetti on plates and spoon over the sauce, or mix them all together in a pan before serving, according to preference.

  • Serve immediately with garlic bread and salad.
  • Ingredients

    • 1 400g can chopped tomatoes
    • 1 red pepper. chopped
    • 2 Cloves garlic. crushed
    • 1 Medium Onion finely chopped
    • 1tsp dried oregano
    • 1 handful Fresh Basil Leaves
    • 2 tablespoons olive oil
    • 12oz dried spaghetti
    •  salt and pepper to taste
    • 6 cherry tomatoes. halved

    This is a pasta dish which my dad calls "my thing", and demands on a regular basis. We often make a half portion and serve it with bean burgers and/or spinach and ricotta slices.
