One-pot Rice and Potatoes with Pesto

Method

  • Fill a saucepan with water and bring to the boil. Add rice and set a timer for 12 minutes while you slice the potatoes and grate the cheese.

  • When the timer goes off, add the potatoes and beans to the pan and set the timer for 8 minutes.

  • Drain the potatoes, rice and beans using a sieve, and return to the pan. Stir through the pesto.

  • Spoon onto plates and top with grated cheese.
  • Ingredients

    • 2 large potatoes (sliced thinly)
    • 1 pack green beans
    • 1 jar green pesto
    • 6oz brown rice
    • 2oz Scottish cheddar (or other mature coloured cheddar)
