Cherry Cake

Ingredients
- 150 grams glacé cherries
- 200 grams self-raising flour
- 1 pinch salt
- 100 grams butter
- 100 grams caster sugar
- 3 medium eggs
- 25 grams ground almonds
Method
- Wash and dry the cherries, mix the flour and salt, cut the cherries in quarters and toss in a little of the flour.
Cream the butter until soft and add the sugar, beating until it is light and fluffy. Beat in the eggs one at a time, with a little of the flour.
Stir in the ground almonds, cherries and the remaining flour, put into a greased and lined 6-inch 15cm baking tin.
Bake at 180°c, 350°f, gas mark 4 for one hour and 20 minutes, remove when cooked and let cool on a wire rack.
