Method

  • Wash and dry the cherries, mix the flour and salt, cut the cherries in quarters and toss in a little of the flour.
  • Cream the butter until soft and add the sugar, beating until it is light and fluffy. Beat in the eggs one at a time, with a little of the flour.
  • Stir in the ground almonds, cherries and the remaining flour, put into a greased and lined 6-inch 15cm baking tin.
  • Bake at 180°c, 350°f, gas mark 4 for one hour and 20 minutes, remove when cooked and let cool on a wire rack.
  • Serve and Enjoy!

    • A lovely cake but I would question the length of baking time. I thought 1 hr 20 rather long so I set the buzzer on my cooker for 1 hour; I checked the cake at 50 mins and it was already cooked and burning on the top. Next time I bake it, I think I will cook initially for 40 minutes.
