Method
• Cut the chicken into pieces (discarding bones). Leave to one side.
• Cook the rice, and whilst still warm add 1 tablespoon of French dressing, chopped spring onions.
• Add the remainder of the ingredients – red pepper, cucumber, celery, peas, sweetcorn, as you please.
• Mix well.
• Allow to cool.
• Add the chicken, mayonnaise and parsley and mix well.
The finished dish was piled high on a platter and decorated as the mood took her.
• Put on to platter and decorate as you please.
