This recipe is so healthy, tastey and fun to eat - it can be easily altered to serve a family.
Cook enough rice for two in a pan or rice cooker and keep warm.
While the rice is cooking, remove the avocado stone and skin and slice into strips.
Flake the tuna, add a dash of the sesame oil.
Slice the carrot & tomatoe
Serve the warm rice on a plate with the lettuce, tuna and other raw sliced veg. Sprinkle over the salad seeds.
Serve the sushi nori on a seperate plate.
Diners take a sushi nori sheet and spoon the ingredients into the centre, add a little sesame oil, soy sauce and wrap up into a sort of square, triangle (it doesn't really matter!).

The options for this dish are endless - try with chicken marinated in honey and soy, crab sticks, salmon and any salad ingredients.
