Method

  • Heat a wok/pan, toss in the chicken with the lime zest and juice, add oregano, seasoning, oil and chilli flakes. Once chicken is lightly browned add peppers. After a couple of minutes add the red onion fry for a few minutes.

  • Serve with tortillas (prefer the old el paso). Guacamole, salsa, salad, cheese and greek style yogurt .

    • Yes, I've had this recipe out of my recipe books. I made a change of cooking chicken till brown first. I think my son had stomach ache when I put all the ingredients in together :). We have these nearly every week too - to die for ;P

    • AWESOME! I found these yummy thanks, better than chiquitos!!! Really easy to make, only took about 1/2hr. You need to cook the red onions for a few mins too which is obvious :)... went down a treat with all!

    Ingredients

    • 600g boneless chicken breasts. cut into strips
    • 1 yellow pepper. deseeded and sliced
    • 1 red pepper. deseeded and sliced
    • 1 red onion. chopped
    • 1 Lime - zest and juice
    • ½ tsp Oregano. dried
    • ½ tsp red chillie flakes
    •  Grind of sea salt
    •  grind of black pepper
    •  olive oil drizzle
    • 8 flour tortillas warmed
    •  Greek Style Yoghurt
    •  salsa
    •  guacamole
    •  Salad leaves
    •  Cheddar Cheese . grated

    I love these, really easy to cook! Used to eat fajitas in restaurants but find these are to die for! Never eaten these out again, and have these nearly every week ,)
