" Fried onion, chorizo & egg on toast. "

The Basics

Ingredients

  • 1 tbsp olive oil
  • 150g chorizo chopped
  •  chopped parsley
  •  salt ground black pepper
  • 1 ciabatta 2 slices
  • 2 free range eggs fried
  • 1 onion sliced

Method

1. Heat the oil in a small frying pan over a medium heat. Add the onion & chorizo and fry for 4 mins until the juices start to run from the chorizo. Stir in the parsley and season with freshly ground pepper.

2. Heat a griddle pan over a high heat. Drizzle the ciabatta with the olive oil and griddle on both sides for 2 mins or until golden.

3.To serve, place the griddled ciabatta onto a serving plate. Place the chorizo & onion on top and then top with the fried eggs.
