Chicken Casserole (in Slow Cooker)

Method

  • 1. Dip chicken in some seasoned plain flour and pan fry briefly in a pan with a little oil and butter just to seal and colour.

  • 2. Put chicken, carrots, onion, garlic, thyme, tomato pureé into slow cooker and cover with stock (you can make your own chicken stock if you prefer, but I find cubes and granules tasty and easy!).

  • 3. Cook on High for first hour, then on Low for approximately 6 to 7 hours.

  • Delicious served with mashed potatoes or add some dumplings to slow cooker for last 30 to 40 minutes.
  • Ingredients

    • 12 Chicken thighs boneless (skin off)
    •  1 Onion. diced
    •  3 Carrots. diced
    •  1 Garlic clove. crushed
    •  1 Tbsp Thyme. dried
    •  1 Tbsp Tomato pureé
    •  Salt & Pepper to taste
    • STOCK
    •  2 Chicken Oxo Cubes & 1 Tbsp Bisto Chicken Granules in 450ml hot water
    •  1 Knorr Chicken cube & 1 Tbsp Bisto Chicken granules in 450ml hot water
    •  2 Tbsp Bisto Chicken granules in 450ml hot water

    Chicken just falls apart and is really tasty.
