Method

  • 1. Turn oven to 180 degrees (adjust if using gas or non-fan)

  • 2. Mix the magarine and caster sugar together using an electric mixer, until smooth.

  • 3. Add each egg one at a time and continue to mix slowly.

  • 4. Gradually add sieved flour and continue to mix slowly.

  • 5. Continue to mix until smooth and glossy.

  • 6. Grease 2 round cake tins (approximately 6" diameter) and line with grease proof paper.

  • 7. Spoon equally into each tin making a slight recess in the middle.

  • 8. Place in the oven for 30-40 mins - checking until golden brown on top.

  • 9. Once taken out of oven leave to cool slightly before removing from the cake tins.

  • 10. Leave to cool completely.

  • 11. Mix icing sugar and margarine together until sweet tasting and spread over one half of cake.

  • 12. Spread any flavour jam onto onther half of cake and place two halves together.

  • 13. Lightly dust top with icing sugar.

    •  margarine or butter
    •  icing sugar. sifted
