Method

  • Mix all the ingredients together and grind in a coffee grinder, liquidizer, or pestle and mortar.
  • Place in an airtight container and keep in a cool, dry place.
  • Tips

    • The word Garam means hot and Masala means spices, so the mixtures of spices are by tradition those that heat the body. I think the words garam and masala are Hindi words, but I might be mistaken, The spices used are all especially aromatic as well, But often when you buy Garam Masala off the shelf, the commercial mixtures regularly cut down on the more expensive cardamom and pack with the more inexpensive coriander and cumin.
      So why don’t you make your own? It is a fantastic process and the results are sensational, if you have never tasted a homemade curry powder, then this is your chance.
      In general, but not always, Garam Masala is sprinkled over food near the end of the cooking to retain its aroma.
      The Garam Masala spices can be used whole, but by tradition, they are ground together in a mortar and pestle, If you don’t have a mortar and pestle, a blender or coffee/spice grinder will do

    • 120 grams coriander seeds
    • 15 grams mustard seeds
