Method

  • Heat the chilli and the oil gently in a pan for about 2 mins, dont burn as you'll wont be able to see or breathe, then set aside.

  • Take the thighs/breasts without the skin and simmer for 30 mins, or until cooked thoroughly, drain , set aside and allow to cool.

  • Chop the cucumber and spring onions into sticks and arrange around the the plate leaving room for the chicken in the middle.

  • Once cooled place, the on a chopping board an give it a damn good whacking with a rolling pin until the chicken broken up.( or place on a plate and tear the chicken apart with two forks)

  • Go back to the pan with the oil and chilli's gently heat for 30 seconds and add the soy sauce (both types)and sugar. Heat for 1 min until the sugar has disolved then add the Peanut Butter. Heat gently for a further 2-3 mins until the sauce has thickened.

  • Place the chicken in the centre of the plate with the cucumber and spring onion and pur the sauce on top of the chicken.

  • Then serve, (personally I could eat all this myself in one go, and have!)

    • Oh yum! I haven't made this in ages. I used to add sesame seeds to mine, just sprinkled on the top. Great tasty salad.
