Method

  • Looking for a new vegetable, snack or salad dish? Puy lentils are quick and simple to prepare as a hot or cold dish, are very tasty, nutritious and full of fibre.
  • Lightly brown the chopped onion in a little olive oil then add chopped garlic. Dissolve the stock powder in a cup of hot water (or use a cup of your own vegetable or chicken stock). Add the lentils and the stock to the onions (add wine first if desired), bring to the boil, cover and then simmer for about 25 minutes.Serve as a hot vegetable or snack (try on fingers of wholewheat toast) or chill to use in a salad (try adding a little creamed horseradish sauce when using as a salad).

    • ½ cup washed dried Puy lentils
    • 1 chopped medium onion
    • 2 chopped cloves of garlic
    • 1 teaspoon vegetable stock powder
    • 1 cup hot water
    • splash light olive oil
    • splash red or white wine (optional)
