this was made with my kids in mind as we all know how hard it is to get them to eat veg.
*heat your fyring pan with the 1tbs oil.
*add in your mince, you must cook this mince for about 25 mins, depending on the quality of the mince it may produce a lot of cooking liquid i just drain this off.
*whilst this is being done you can boil your pasta, i dont use spaghetti for this as it gets too messy in a bake. most pasta's take about 13-15 mins to cook unless you are making fresh pasta which i will have a recepie on here soon for, which only take 2-3 mins.
*fry your onions and courgette until lightly browned, then remove from heat and blend in a blender or with a handheld blender. blend these with your tinned tomatoes and your herbs.
*next get an oven proof dish and lay your pasta into the bottom
*return your mince along with the sauce onto the heat, mix well together and heat thoroughly so the meat can absorb some of the sauce, add around 3 tbs water to the mixture if it becomes slightly dry.
*layer your meat and sauce over your pasta, then gently mix together
*sprinkle your breadcrumbs over the top lightly, you only want a thin layer. then do the same with the cheese, this layer can be as thick as you like.
*place into a hot oven or under a hot grill, for about 15 mins just long enough to heat the mixture so it is ready to serve, and your topping should be lovely and brown and bubbling.
serve this with crusty bread and butter, and it will soon become a family favourite.
you can add any veg to this, you can try different coloured pasta's, different cheeses or even different meats, i love making this using chicken strips.
