Breakfast Skillet with Bacon and Eggs

Method

  • In a heavy frying pan / skillet, cook the bacon until crisp remove to paper towels to drain.
  • In the pan drippings, cook the onion and potatoes until browned, about 3 minutes then add the diced mushroom and cook for 1 more minute.
  • Pour the beaten eggs into the pan and cook, stirring gently, until the eggs are just set and cooked. Season with salt and freshly ground black pepper sprinkle with the bacon and grated cheese let stand a minute or two, just until cheese melts.
  • Serve and Enjoy!

    • I am diabetic so,Sunflower Oil replaces Lard.Remove all fat from Bacon and go easy with the cheese.Otherwise, Lovely Jubbly.Enjoy
