Method

  • Pre heat oven to 170degC Grease & line loaf tin
  • Cream Butter & sugar until light in colour.
  • Beat in eggs, one at a time.
  • In a separate bowl sift flour, salt, bicarb and baking powder, add half the flour mixture gently folding in, add milk.Add mashed bananas and choppped dates along with the rest of the flour with a folding action. do not over mix.
  • Spoon into lined loaf tin and bake in oven for 50-60 minutes. Test with skewer when it comes out clean it's ready.
  • Tips

    • 3large bananas or 2 small approx

    Ingredients

    • 175g dark muscovado sugar
    • 125g butter. softened
    • 2 Eggs Beaten
    • 280g plain flour
    • 125ml Milk (pref. semi-skimmed)
    • 1 tsp bicarbonate of soda
    • 1tsp baking powder
    • pinch salt
    • 100g Dates. chopped
    • 275g bananas. mashed

    Friend of mine gave me this recipe when I said I had dates left from Christmas and some over ripe bananas. So gave it a try, its now a favourite, especially naughty with butter!
