Fed up with "mixed veg"? Want a variety of veg but do not want a load of pans and different cooking times? This one-pot solution will go with chops, sausages, gammon steaks and lots of other things.
Method:
Put the leeks in a casserole dish with a knob of butter or a splash of olive oil and a splash of water, put on lid and bake in a moderate oven (150 fan) for about 30 min. Add the spinach leaves and the drained tinned potatoes(you can also use firm, cooled,pre-boiled fresh new potatoes). Grate the cheese on top, sprinkle with paprika (for flavour but more for effect!), replace lid and bake for a further 10 t0 15 minutes, by which time the spinach will be cooked, the cheese melted, and the potatoes hot.
