Method

  • Combine the cream and butter in a saucepan, bring to a simmer and cook for 2 minutes, remove from the heat.
  • Stir in half of the Parmesan cheese, add salt and pepper to season, I like to use freshly ground white pepper so there are no black bits and the white pepper has a more laid-back flavour
  • Gently mix the warm sauce with freshly cooked pasta and serve with grated Parmesan cheese along side.
  • This sauce is also wonderful with lasagne or ravioli.
  • Serve and Enjoy!

    • Hi,Yes Creme Fraiche is very good and as there isn't much difference in flavour or texture using full fat or half fat I would use half fat

    • Hi Swishyfresh. If you want to adapt this because double cream is too heavy, try creme fraiche, either traditional or half fat. I use it for loads of pasta dishes - it's excellent.

    • I tried this last night and it was delicious!!!

The only thing was, that the double cream is a really really heavy... and so you can't have much of it without feeling a little sickly.

I'll definitely do this again, but I'll probably be replacing the double cream with a thick Béchamel (white) sauce.

      Great recipe!
