Hi,Yes Creme Fraiche is very good and as there isn't much difference in flavour or texture using full fat or half fat I would use half fat

Hi Swishyfresh. If you want to adapt this because double cream is too heavy, try creme fraiche, either traditional or half fat. I use it for loads of pasta dishes - it's excellent.

I tried this last night and it was delicious!!!
The only thing was, that the double cream is a really really heavy... and so you can't have much of it without feeling a little sickly.
I'll definitely do this again, but I'll probably be replacing the double cream with a thick Béchamel (white) sauce.
