Method

  • Ok so peel and chop up the carrot into thin slices and put in a pan of boiling water and gently simmer.

  • prepare all the other veg, chop it up in to bite size pieces,

  • gently heat the sesame oil in a wok and as it starts to sizzle add the chopped onion, fry that for a few minutes before adding the peppers and mushrooms.

  • Add the pineapple and also about half the can of juice too, also splash in some rice vinegar to balance and soy sauce,

  • Once the carrots are half cooked add the egg noodles in with them to cook. (this way they soak up some of the lost vitamins from the carrots)

  • Add the chopped garlic to the vegetables and keep stirring until the noodles are cooked

  • Once the carrots and noodles are done, drain them and add to the main wok with the vegetables, finally add the spinach

  • stir fry everything for a few minutes, adding any of the juices or sauces if necessary until it looks done :)

    • 1 tin pineapple chunks in juice (canned)
    • 2 portion Egg noodles
    • 1 red pepper
    • 1 large garlic cloves
    • few handfuls Spinach leaves
    • splashes soy sauce
    • splash rice vinegar
    • 1 large Carrots
    • handful mushrooms
    • 1 small onion
    • splash sesame oil
