Ok so peel and chop up the carrot into thin slices and put in a pan of boiling water and gently simmer.
prepare all the other veg, chop it up in to bite size pieces,
gently heat the sesame oil in a wok and as it starts to sizzle add the chopped onion, fry that for a few minutes before adding the peppers and mushrooms.
Add the pineapple and also about half the can of juice too, also splash in some rice vinegar to balance and soy sauce,
Once the carrots are half cooked add the egg noodles in with them to cook. (this way they soak up some of the lost vitamins from the carrots)
Add the chopped garlic to the vegetables and keep stirring until the noodles are cooked
Once the carrots and noodles are done, drain them and add to the main wok with the vegetables, finally add the spinach
stir fry everything for a few minutes, adding any of the juices or sauces if necessary until it looks done :)
