2. Lightly dust the fish in the flour, shaking off any excess flour.
3. Melt the Clover in a large frying pan. Add the fish, skin side down and cook for about 5 minutes or until the skin is crispy. Turn over and cook for a further 2 minutes.
4. Add the lemon juice, capers and parsley and season well. Cook for a further 2-3 minutes or until the fish is cooked.
5. Serve the fish drizzled with the caper mixture with new potatoes and seasonal vegetables.
