Method

  • 1. Season the flour and place on a large plate.

  • 2. Lightly dust the fish in the flour, shaking off any excess flour.

  • 3. Melt the Clover in a large frying pan. Add the fish, skin side down and cook for about 5 minutes or until the skin is crispy. Turn over and cook for a further 2 minutes.

  • 4. Add the lemon juice, capers and parsley and season well. Cook for a further 2-3 minutes or until the fish is cooked.

  • 5. Serve the fish drizzled with the caper mixture with new potatoes and seasonal vegetables.

    • 2 tbsp.  Plain flour
    • 2 Sea bass fillets. skin on
    • 50g  Clover
    • 1 Juice of small lemon
    • 1 tbsp. Capers. rinsed and drained
    • 1 tbsp.  Parsley. chopped
    •  Salt and freshly ground black pepper
