Toffee Apple & Pecan Muffins
Method
1. Heat the oven to 200C/fan 180C/gas 6 and line a 12-hole muffin tin with paper cases.
2. Mix butter, eggs, milk and sour cream together
3. Add quickly to dry ingrediants, with the apples, pecans and toffees. Do not over mix
4. Divide between cases and bake for 25 mins.
5. Allow to cool before eating.
Ingredients
- 100g Butter. melted and cooled
- 2 Eggs. beaten
- 100ml Milk
- 150ml Soured Cream
- 300g Plain Flour
- 150g Golden caster sugar
- 2tsp Baking Powder
- 1tsp Bicarbonate of soda
- 3 Cox Apples. peeled. cored and diced
- 75g Pecans. roughly chopped
- 100g Soft Toffees. chopped
