Toffee Apple & Pecan Muffins

Method

  • 1. Heat the oven to 200C/fan 180C/gas 6 and line a 12-hole muffin tin with paper cases.
  • 2. Mix butter, eggs, milk and sour cream together
  • 3. Add quickly to dry ingrediants, with the apples, pecans and toffees. Do not over mix
  • 4. Divide between cases and bake for 25 mins.
  • 5. Allow to cool before eating.
  • Ingredients

    • 100g Butter. melted and cooled
    • 2 Eggs. beaten
    • 100ml Milk
    • 150ml Soured Cream
    • 300g Plain Flour
    • 150g Golden caster sugar
    • 2tsp Baking Powder
    • 1tsp Bicarbonate of soda
    • 3 Cox Apples. peeled. cored and diced
    • 75g Pecans. roughly chopped
    • 100g Soft Toffees. chopped
