Method

  • in a small dish put in the sugar,cornflour,vinegar,soy sauce, sherry and pineapple juice and stir well.if cooking rice, put the required amount on now to cook,noodles can be left til a couple of minutes before serving,in a large hot wok/pan,add oil,onions and cook until soft,then add chicken,peppers,mushrooms and cook quickly until chicken is cooked but not brown,then add the tomatoes,pineapple chunks,and beansprouts, season to taste. pour over the sauce, cook for 5-7 minutes until thickened, serve hot.

    Ingredients

    • 2tbsp sweet sherry
    • 2 Chicken breasts. boneless and skinless . cut into strips
    • 2 tbsp olive oil to fry
    • 2 Onions. sliced
    • 1 pepper (any colour) sliced
    • 2 tbsp brown sugar
    • 1 tbsp  Cornflour
    • 2 tbsp cider vinegar
    • 1 tbsp light soy sauce
    • 1 tin of pineapple chunks(keep juice)
    • 2 tomatoes. quartered
    • 1 packet Beansprouts
    • 8 mushrooms sliced
    •  either noodles or rice
