Method

To ensure the best taste you must wash the chicken thoroughly first. I cut away bits I dont need (very top of wing, very bottom of drum stick, and parsons nose). Clean inside (remove any leftover bits and take away as much fat inside (and inside skin) as you can. Then I wash first with flour (plain) thoroughly in and out and then again with salt (in and out).

This is why preparation time takes 10-20 mins....

Dry (this is very important) the chicken very well and put onion inside.

Then make sure chicken has enough room in the pan and sprinkle salt (any kind) all round the chicken (even on the bottom). Dont over do it..

Obviously the oven is pre-heated around 210oc
and cook for about 1.5 hours (for med-small chicken) then take out and put on a oven tray (on its back) (make sure juices have run out before) and put back for another half hour. voilla (is that correct spelling!!!) fab chicken.....
