boil the potatoes in salted water until they are slighly undercooked,cool in coldwater,drain and dice.
heat the butter in a frying pan, add onions and thyme and fry for 3 mins, add in the marmite,stock , red wine and reduce by half, add the corned beef,parsley and season to taste, cook for 5-10 minutes, break it up with a fork and serve hot
