Method

  • boil the potatoes in salted water until they are slighly undercooked,cool in coldwater,drain and dice.
  • heat the butter in a frying pan, add onions and thyme and fry for 3 mins, add in the marmite,stock , red wine and reduce by half, add the corned beef,parsley and season to taste, cook for 5-10 minutes, break it up with a fork and serve hot
  • Ingredients

    • FILLING:
    • 25g butter
    • 2 onion. finely chopped
    • ½ tbsp dried thyme
    • 1 tsp marmite
    • 350ml beef stock
    • 150ml red wine
    • 375g corned beef
    • 2 tbsp chopped parsley
    •  salt and pepper
    • TOPPING:
    • 250g potatoes.peeled
    •  salt and pepper
    •  Milk and butter. for mashing
    • 50g Cheddar Cheese . grated
    • 25 g Breadcrumbs
