Method

  • gas 4
  • grease a baking tin, sieve the flour,add the cold cubed butter and rub in until it resembles fine breadcrumbs,add the sugar and egg yolk and a few drops of water to combine,refrigerate until the dough is firm.
  • blind bake the pastry for 10-15 minutes, once its cooked spread the jam over the base,combine the 2 eggs,butter,sugar,flour,ground almonds,and almond extract and mix well,it should be dropping consistency,if it is too stiff add a touch of milk,, pour the mix over the base, sprinkle woth flaked almonds,bakew for 25-30 minutes.

    • 100g Plain Flour (sieved)
    • 50g butter
    • 1 egg yolk
    • 1 tbsp caster sugar
    • FILLING:
    • 2tbsp Jam of your choice
    • 100g butter
    • 100g caster sugar
    • 2 eggs
    • 100g self raising flour
    • 50g ground almonds
    •  few drops almond extract
    •  Flaked almonds.to sprinkle on t op
