beat the butter and the sugar together until pale in appearence,stir in the flour to get it to a smooth paste,turn it out onto a floured work surface,and gently roll out until the paste is about a 1cm in thickness,cut into which ever shape you desire,sprinkle with caster sugar, place them onto a greased baking tray,and chill them in the refrigerator for 20 minutes, bake them in the oven for 10-15 mins until very slightly golden.
notes- if you want a different shortbread try adding 100g milk choc chips, or alternatively, melt a little chocolate down and when the biscuits have cooled dip just half the biscuit in and set aside to cool properly.
