Method

  • put the dates, water ,milk,sugar and margerine into a pan and bring to the boil,then simmer for 5 mins, sift the flour,spices,bicarb and salt, put walnuts into the flour mixture, pour the warm date mix into the flour mix and mix for a few minutes to make sure there are no flour pockets or air pockets, pour into a large loaf tin that has been lined, bake for 1 hour, leave to settle in the loaf tin for ten mins whilst cooling before removing.

    • 50g walnuts chopped
    • 160g chopped dates
    • 80g margarine
    • ½ pt water
    • 14 oz can condensed milk
    • 8oz self raising flour
    • 1 tsp mixed spice
    • ¾ tsp bicarbonate of soda
    • pinch salt
    • 50g caster sugar
