Easter Biscuits

Method

  • 1. Sift flour, salt and spice into a bowl

  • 2. Rub in butter, add sugar, chocolate chips and lemon juice

  • 3. Beat egg and milk, add to make the dough

  • 4. Roll out just 5mm thick

  • 5. Cut out biscuits and transfer to lightly greased baking sheets

  • 6. Bake at 375F, Gas Mark 5, 190C for 10-12 minutes

  • 7. Cool on a wire rack

    • 12 oz Plain flour
    • 0.25 tsp. Salt
    • 1 tsp. Mixed spice
    • 6 oz Butter
    • 4 oz Caster sugar
    • 1 tbsp. Lemon juice
    • 1 Egg. beaten
    • 1 tbsp. Milk
    • 3 oz Chocolate chips
