Cinnamon & Sour Cream Coffee Cake

Method

  • Preheat oven to 175'C. Spray a 22cm square cake tin with oil.

  • Sift flour, baking soda, baking powder, cinnamon and a large pinch of salt together in a large bowl. Add brown sugar and combine. Set aside.

  • Mix sour cream, oil and apple sauce together in a small bowl. Combine sour cream mixture with flour mixture and gently fold. Do not over beat.

  • Spoon mixture into a prepared tin. Bake in oven for 45 - 50 minutes or until a skewer inserted in the centre comes out clean. Allow cake to cool before serving.

    • 1 ½ cups plain white flour
    • ¾ cup brown sugar
    • 1 tsp baking powder
    • 1 tsp baking soda
    • 1 tsp ground cinnamon
    • ¾ cup (175ml) extra low-fat sour cream
    • 2 Tbsp vegetable oil
    • 1 cup (250ml) apple sauce
