Method

  • Heat a large frying pan with a drizzle of olive oil and brown the meat, once couloured on all sides transfer the meat to bowl or plate.

  • Now add the butter to the empty frying pan and add the onions, mushrooms and crushed garlic, stir regularly to ensure that they do not burn and cook all the way through.

  • Now add the tomato puree (and paprika if required) and stir in, then transfer the meat back into the frying pan. Heat the meat through then add the rum/brandy and ensure this is cooked off.

  • Remove the pan from the heat and slowly add the cream, stirring in all the time, once added return to the heat and warm through. If the sauce is a little thin in consistency keep on the heat until reduced as required.

  • Add a good measure of salt and pepper to taste and serve.
  • Tips

    • Serve with boiled long grain rice, soft noodles, linguine or tagliatelle.

    • 50ml Double Cream
