Hungarian Easter Twisted Bread/ Fonott Kalacs

Method

  • 1. Stir 1 teaspoon sugar and yeast into cooled scalded milk and let sit for 5 minutes.

  • 2. Combine the flour, salt, yeast mixture, butter ,sugar, 2 eggs, and raisins,in a large bowl until well mixed.

  • 3. Knead until smooth, adding more flour, if necessary.

  • 4. Oil the on both sides then place it in a bowl,sprinkle with flour and cover with a clean kitchen clothes and let rise in a warm place until doubled.

  • 5. When risen,place the dough onto a lightly floured surface. Divide into 3 equal pieces and let rest, covered, about 5 minutes.

  • 6. Roll each piece of dough into 3 ropes about 20 inches long and braid on a parchment-lined baking sheet, tucking ends under. Instead of one long egg twist, the braid can be joined to make a circle shape. Cover with the kitchen clothes and let rise until doubled.

  • 7. Heat oven to 375 degrees. Brush egg-milk glaze over entire surface of braid. Bake it for about 45- 50 minutes. Let rest at least 15 minutes before slicing.

    • 20g Active dry yeast
    • 500g All-purpose flour
    • 1 tsp. Salt
    • 70g Softened butter
    • 2 Large eggs
    • 50g Raisins
