Spiced Skewered Lamb

Method

  • Soak 8 to 10 wooden skewers in water for about 30 minutes. Mix all the ingredients for the seasoning in a bowl, add the lamb, and stir well to coat it in the spices, I find that if you let it stand for 10 minutes the flavours become really deep, and then thread the lamb onto the skewers (something like satay).
  • Heat a pan (we use a ridged griddle) over a high heat and add a mizzle of olive oil, put the skewers in the pan and cook until browned on one side, turn over and cook for 1 minute, take of the heat.
  • To Serve, Make a nice mixed salad (we like to add some citrus segments a mix of orange and grapefruit is nice), share the salad between two plates and place the lamb on top.
  • Serve and Enjoy!

    • In China, street-food is very popular and dishes like this are so much better than a “Mickey D” thing. This recipe is from Ching-He Huang a fantastic chef who is blowing through the Asian cooking community like a breath of fresh air.

    Ingredients

    • YOU WILL NEED
    • 200 grams lamb fillet. very finely sliced. and then cut into small pieces
    •  Some olive oil for grilling
    • 1 teaspoon  rice wine. we use Shao hsing rice wine you could use dry sherry
    • FOR THE SEASONING
    • 1 teaspoon ground cumin
    • 1 teaspoon fennel seeds
    • 1teaspoon dried chilli flakes
    • ½ teaspoon paprika
    • ½ teaspoon sea salt
    • 1 teaspoon light soy sauce
    • 1 teaspoon groundnut oil
