- Most new cooks think blackened means burned. Blackened actually refers to the spices becoming slightly charred and giving the cut of fish this smoky and spicy flavouring
If you don't have a griddle pan use a frying pan.
Cajun Food originates from the "Cajun" people in the Acadiana region of Louisiana, USA where locally grown food dominates with simple preparations. A Cajun meal traditionally consists of three dishes, the main dish, the second dish, usually rice or cornbread, and the third is usually a vegetable dish made from the most abundant vegetable available at the time of year.
Cajun Food is a food borne out of necessity, where people had to live off the swampy land they lived. As such it is a rustic food style of locally grown foods like crawfish, rice and sugar cane.
The holy trinity of Cajun and Creole cooking is onion, celery and bell peppers. These vegetables are usually cut up really well and combined into cooking. Parsley, bay leaf, green onions and dried cayenne pepper are traditionally used for seasoning.
Ingredients
- YOU WILL NEED
- 3 tablespoon Cajun seasoning. see my recipe
- 4 by 180 grams salmon steaks. or fillets
- FOR THE SALSA
- 2 tablespoons olive oil
- 1 medium onion. peeled and finely chopped
- 1 red chilli pepper. seeded and chopped
- 1 clove garlic. minced
- ΒΌ teaspoon chilli powder
- 1 x 400 gram tin chopped tomatoes
- 3 tablespoon freshly chopped coriander
