Method

  • Place chopped chicken thighs & potatoes in a deep casserole dish add tin of coconut milk and 1/2 jar of madras curry paste. cook in oven for approx 1 1/2 hours.
  • at the last 10 or 15 mins add the mango and spring onions.
  • serve with rice and enjoy

    • peeled &chopped Potatoes
    • bunch of spring onions finely chopped
    • can of coconut milk
    • 1 mango. peeled and sliced or diced
    • ½ jar Madras curry paste
    •  Chopped chicken thighs/breast
