Sausage Cobbler

Method

  • Set oven to 200 degrees C
  • Fry sausages in olive oil. Cut into chunks & put into a casserole dish.
  • Fry onions, carrots and leeks. Stir in flour & remove from heat.
  • Blend in stock and wine. Bring to boil.
  • Add chilli powder, tomatoes, mushrooms, beans, salt & pepper and garlic.
  • Pour mixture over the sausages.
  • To make cobbler, sieve flour & salt. Add herbs. Add margarine and rub in. Add milk to a soft dough. Roll out to half inch thick. Use 2 inch crinkle cutter to cut 10 scones and place in a circle on top of mixture.
  • Cook at 200 degrees C for 45 minutes until the topping is golden.

  • Freezes well without scones, add scones on day of cooking.
  • Ingredients

    • SAUSAGE MIXTURE
    • 8 sausages of your choice
    • 1 onion. chopped
    • 1 Leeks. sliced
    • 2 Carrots Peeled and Chopped
    • little olive oil to fry
    • 3 cloves garlic finely chopped
    • 1 heaped teaspoon chilli powder
    • tin mushrooms sliced
    • tin mixed beans/pulses
    • tin Tin of Chopped Tomatoes
    •  salt and pepper
    • 500ml stock. dependant on meat choice
    • 4 tablespoons red wine
    • 1 tablespoon plain flour
    • COBBLER
    • 225g self raising flour
    • 1 teaspoon mixed herbs
    • 45g margarine
    • 125ml milk
