Method
Brown the meat and remove it from the pan.
Add the anchovies, vegetables and the thyme to the pan. Leave for 10 minutes until the vegetables start to soften.
In a separate pan heat the marsala and stock.
Return the meat to the vegetables and add the flour - cook for a couple of minutes before adding the stock mix.
Stir in the puree, mace and season with pepper.
Cook at 150 degrees for 3 hours until the beef is tender.
Tips
- Cook this in a slow cooker if you are worried about wasting gas - it only uses the same amount of electricity as a light bulb!

- 1½ kg Beef for braising
- 1 Large sliced onion
- 3 Cloves of garlic
- 3 Carrots peeled and cut into chunks
- 4 Celery sticks cut into chunks
- 2tsp Thyme
- 6 Anchovy fillets
- 2 heaped tbsp Plain flour
- 3tbsp Marsala
- 500ml Red wine
- 300ml Beef stock
- 1tbsp Tomato puree
- ½tsp Mace
