Method

  • Brown the meat and remove it from the pan.

  • Add the anchovies, vegetables and the thyme to the pan. Leave for 10 minutes until the vegetables start to soften.

  • In a separate pan heat the marsala and stock.

  • Return the meat to the vegetables and add the flour - cook for a couple of minutes before adding the stock mix.

  • Stir in the puree, mace and season with pepper.

  • Cook at 150 degrees for 3 hours until the beef is tender.
  • Tips

    • Cook this in a slow cooker if you are worried about wasting gas - it only uses the same amount of electricity as a light bulb!

    Ingredients

    • 1½ kg Beef for braising
    • 1 Large sliced onion
    • 3 Cloves of garlic
    • 3 Carrots peeled and cut into chunks
    • 4 Celery sticks cut into chunks
    • 2tsp Thyme
    • 6 Anchovy fillets
    • 2 heaped tbsp Plain flour
    • 3tbsp Marsala
    • 500ml Red wine
    • 300ml Beef stock
    • 1tbsp Tomato puree
    • ½tsp Mace
