Method

  • 1. Heat oil in large casserolea and cook chicken pieces for 10 mins

  • 2. Add mushrooms and shallots and cook stirring gently until golden brown

  • 3. Remove chicken, shallots and mushrooms from casserole and drain on kitchen paper

  • 4. Add flour and stir constantly for 3-5 mins until lightly browned. Gradually pour in stock then wine and stir until smooth

  • 5. Put chicken etc back into casserole and add bay leaf, garlic and salt and pepper to taste

  • 6. Bring to the boil, cover and cook in oven at 180c for about an hour

  • Then serve with wild rice and mange tous!!!

    • 1 Chicken cut into 8
    • 8 Shallots
    • 8 oz Button mushrooms
    • 1 oz Plain Flour
    • ½ Pint Red wine
    • 1 Bay Leaf
    • 1 Large Garlic clove
    •  Salt and Pepper
    • 2 tbsp Vegetable Oil
