Coq Au Vin

The Basics

Ingredients

  • 1 Chicken cut into 8
  • 8 Shallots
  • 8 oz Button mushrooms
  • 1 oz Plain Flour
  • ½ Pint Red wine
  • 1 Bay Leaf
  • 1 Large Garlic clove
  •  Salt and Pepper
  • 2 tbsp Vegetable Oil

Method

1. Heat oil in large casserolea and cook chicken pieces for 10 mins

2. Add mushrooms and shallots and cook stirring gently until golden brown

3. Remove chicken, shallots and mushrooms from casserole and drain on kitchen paper

4. Add flour and stir constantly for 3-5 mins until lightly browned. Gradually pour in stock then wine and stir until smooth

5. Put chicken etc back into casserole and add bay leaf, garlic and salt and pepper to taste

6. Bring to the boil, cover and cook in oven at 180c for about an hour

Then serve with wild rice and mange tous!!!
