Method

  • Fry the onions slowly until soft and caramelised (about 20 mins).

  • Fry the bacon.

  • Spread the cheeses, bacon and onions over the base of the tart.

  • Mix the eggs, cream and herbs and season with salt and pepper (not too much salt because of the bacon and feta).

  • Pour the egg mix into the tart shell and bake for 30 minutes at 180 degrees until set.

    • 1 Shortcrust pastry shell
    • 4 Eggs
    • 450ml Double cream
    • 100g Cheddar cheese (grated)
    • 50g Feta cheese
    • 200g Bacon lardons
    • 1 Onions
    • 1-2tbsp Herbs de provence
