Method

  • 1. If you are using wooden skewers you will need about 12 if small or 8 if big which should be soaked in warm water before you use them for about 30 mins

  • 2. Make the marinade by putting oil, soy sauce, vinegar and a bit of black pepper to taste in a large bowl.

  • 3. Cut chicken into chunks and put in marinade

  • 4. Cover and put in fridge for about 15 mins

  • 5. Cut green pepper into chunks ready to put on skewers

  • 6. Take chicken out of fridge and put on skewer with green pepper and mushrooms

  • 7. Put on bar-b-q and cook using marinade to baste
  • Ingredients

    • 2 Green Peppers
    • 1lb Cherry Tomatoes
    • ½ lb Button Mushrooms
    • 6 fl oz Olive oil
    • 4 fl oz Light soy sauce
    • 4 tbsp Red wine vinegar
    • 4 Chicken fillets
