Chicken Liver Risotto

The Basics

Ingredients

  • 1 Medium Onion
  • 4 oz Sliced mushrooms
  • 8 oz Chicken Livers
  • 2 tbsp Oil
  • 7 oz Basmati rice
  • 1 Clove Garlic
  • 4 fl oz Red wine
  • 1 rounded tbsp Tomato puree
  • 2 tsp Brown sugar
  • 16 fl oz Chicken stock

Method

1. Finely chop onions

2. Slice mushrooms

3. Halve livers

4. Rinse rice

5. Saute onions until soft and golden. Add rice and stir for about 3 mins

6. Add liver, mushrooms and garlic and cook for a further 3-4 mins

7. Add wine, tomato puree, sugar and stock.

8. Bring to the boil, cover and cook for about 20 mins.

9. Make sure rice is cooked then serve

I loved this dish and found it very easy to make, however I almost muddled up the 2 teaspoons of sugar for two TABLESPOONS
