Method

  • 1. Lightly grease tins and line bottoms with baking parchment

  • 2. Combine all the cake ingredients in a large bowl and beat well until smooth approx 2 mins

  • 3.Divide the mixture between the two tins and smooth top. Bake in oven 180c for about 25 mins until cakes are golden and springy to the touch

  • 4. Take cakes out of tins and put on wire racks peel off lining paper and leave to cool

  • 5. Whip cream and put on bottom layer of cake

  • 6. Slice strawberries and put on top of cream put other layer of cake on top and sprinkle with caster sugar

  • 7. If you want to be really decadent you can put cream and more sliced strawberries on top of cake as well!!!!

    • 6 oz Butter or soft margarine
    • 6 oz Caster sugar
    • 3 Eggs
    • 6 oz Self raising flour
    • 1½ tsp Baking powder
    • 1 Small carton Whipping cream
    • as required Strawberries
    • 2  7 inch Sandwich tins
