Method

  • Sieve the floor, ground almonds, cocoa powder into a large mixing bowl.

  • Combine the dry ingredients.

  • Add the soya milk and maple syrup. Then add the sunflower oil.

  • Add the chopped walnuts (or pecans)if using.

  • Grate the beetroot and and to mixture.

  • Transfer the mixture to a square tin and bake for approx 25 minutes at 180 degrees/
  • Ingredients

    • 5oz Self-raising flour
    • 5oz caster sugar
    • 2 tbsp cocoa powder
    • 1oz ground almonds
    • 2 tbsp Maple Sugar
    • 8 fl oz soya milk
    • 5 tbsp sunflower oil
    • handful chopped walnuts (optional)
    • 2 beetroot cooked
    • 1 tsp Vanilla extract / essence
