Fish Pie

The Basics

Ingredients

  • 2 ½ lbs Cod fillets
  • 1½ Pints Milk
  • 3oz Plain Flour
  • 3oz Butter
  • 3 rounded tbsp Double cream
  • 4 oz Grated cheese
  •  Salt and pepper
  • 1 Head Broccoli
  • 2 Large Tomatoes
  •  Topping
  • 3 lb Potatoes
  • 4 fl oz Milk
  • 3oz Butter
  •  Salt and pepper

Method

1. Cut the fish into cubes and put into a dish so that it completely covers the bottom and there is enough room above to add cheese sauce, broccoli, tomatoes and a potato topping

2. Chop the broccoli into small heads and add to fish. Remove skins from tomatoes (by placing in boiling water) slice and put on top of fish.

3. Now make the sauce. Put the milk into a pan with the flour and butter and start whisking it over moderate heat. When it is evenly thickened stir with a wooden spoon for a further 3 mins. Add the cream, salt and pepper to taste and stir. Take off heat add cheese and stir.

4. Pour sauce over fish

5. Boil potatoes until soft, drain and then add milk, butter and salt and pepper to taste. Use potato masher to make mash

6. Put potato on top of fish and make a design with a fork on top

7. Put in oven 200c for 40-45 mins until top is golden brown and you can see filling bubbling up a bit at the side.

nice but without the cheese sauce and tomatoes... they ditract from the clean fish taste. imo :P
