Method

  • In a large bowl, whip the mascarpone and custard together until fully combined.

  • Using half of the madeira cake fingers, dip them into the cooled coffee and optional spirit. Then place them in the bottom of each of four serving glasses.

  • Top with a little of the chocolate, followed by a layer of the creamy mascarpone and custard mixture.

  • Repeat the layers once more, finishing with a scattering of chocolate for decoration. Chill until you're ready to serve.
  • Ingredients

    • 350g mascarpone
    • 500ml carton fresh custard
    • 100ml freshly made coffee. cooled
    • 250g madeira cake. cut into chunky fingers
    • 200g favourite chocolate bar. smashed into small pieces
    • 50ml marsala wine or a liqueur (optional)
