Almond Maccaroons

Method

  • Beat egg whites till stiff. Beat in 1/2 the sugar, a spoonful at a time. Fold in the lemon rind, rest of the sugar and the ground almonds. Wet hand in cold water and roll into small balls. Put a split almond on to each ball and put them on a greased tin and bake for about 25 minutes at 325 degrees until pale golden brown.
  • Tips

    • To keep the biscuits fresh, keep them in a tin with a slice of cake.

    •  rind of ½ a lemon
    •  split roasted almonds to decorate
