Method

  • 1 Cook Bulgar Wheat According to packet instructions, Drain & leave to cool.
  • 2Stir in tuna ,peppers , mint ,& spring onion.
  • 3 Mix 2 tbspns of the reserved oil from the peppers , with the lime or lemon juice ,then stir into the bulgar wheat mixture,
  • 4 Season to taste with salt & fresh ground black pepper.
  • 5 Serve with slices of lemon or lime
  • Tips

    • I usually use the peppers sold as antipasti to make this dish.

    Ingredients

    • 60 g Bulgar wheat
    • 185 g Tuna flakes in brine. drained
    • 4 pieces marinated peppers in oil . drained oil reserved. Coarsely sliced
    • 2 tbspn Fresh Mint Chopped
    • 3 Spring onions trimmed and sliced
